* refactor(issue-379): auto-detect thinking models, remove OPENAI_THINKING_ENABLED

- _AUTO_THINKING_MODELS: deepseek-reasoner, deepseek-r1, qwq (no extra_body)
- _OPT_IN_THINKING_MODELS: deepseek-chat -> payload (decoupled for Qwen3 etc.)
- Remove env/config/registry/i18n for OPENAI_THINKING_ENABLED
- User transparent, no manual config required
